Chicken Bake

- Four chicken breasts, skin removed
- 1 1/3 cups Carolina Plantation white rice
- 1 can of cream of chicken soup
- 1 can of chicken broth
- 1 box of frozen peas and carrots
- 8 ounces cheddar cheese
- salt and pepper to taste
Preheat oven to 350 degrees.
Mix all ingredients except chicken and cheese, and pour into a 9x13 casserole.
Top mixture with the chicken, cover with foil and bake 50 minutes.
Remove from the oven, sprinkle the cheese on top, return to the oven uncovered until cheese is melted.
