Cornmeal Pancakes

Mix and let stand 10 minutes
- 1 cup cornmeal
- 2 tbsp sugar (optional)
- 1 tsp salt
- 1 cup boiling water
Beat together
- 1 egg
- 2 tbsp melted butter
- ½ cup milk
Add to cornmeal
- Sift: ½ cup flour
- 2 tbsp baking powder
Add to batter and cook on lightly greased hot griddle.
Notes:
* 1/4 cup batter per pancake
* Adding more milk makes a thinner pancake
