Fried Plantation Quail

- A few Quail (allow 2 per person)
- 1 quart buttermilk
- 1 bag Carolina Plantation Rice Flour
- Tabasco sauce
- Salt and pepper
Pour buttermilk in a large bowl. Shoot in four or five strong shots of Tabasco (don’t substitute!). Submerge birds and let sit in fridge overnight.
Drain birds. Dredge in Carolina Plantation Rice Flour and fry at 375 degrees until golden brown.
Serve with Carolina Plantation Grits, white or yellow. They are both great!
