Rice with Raisins and Pecans
Submitted by Bennet Bolton
When preparing -- the usual 1 cup of Carolina Plantation rice with 2 cups of water and some butter (perhaps 1 or 2 tbs) --try adding at the outset a handful of Rosenthal California mixed raisins (the bag has five varieties!) plus a handful of chopped pecan halves.
Do not overdo the water, as the raisins already have a fair amount of moisture. You might experiment by also adding some fresh chopped mushrooms -- and even a touch of curry powder.
No matter what you do, you cannot destroy the wonderful aromatic flavour of that good Carolina rice. This is from a good New York boy (age 72) who fell in love with the South! -- and moved down to Dixie.
